担担面 | Dad’s Dan Dan Noodles | Dan Dan Mian
My dad invented this recipe 10 years ago. This is his take on dan dan noodles. :D
Ingredients
- any kind of noodles (4 servings)
- handful of pea shoots (or any other leafy green)
Toppings
- ground pork
- preserved veggies ( 芽菜 - mine are fermented mustard greens) (optional; hard to find)
- green onion
Sauce
- 3 teaspoons soy sauce
- 1 teaspoon sugar
- homemade hot chili oil
- 2 teaspoons sesame oil
- 1/2 - 1 teaspoon Sichuan pepper oil (花椒油)
- 1 tablespoon lao gan ma spicy chili crisp
- 1 teaspoon lao gan ma chili oil with black bean
- 4 teaspoons chicken broth
Directions
- Stir fry the ground pork. When it is fully cooked, add the preserved veggies and fry for another 3 minutes. This can be prepared ahead and stored in the fridge for a week.
- Boil the noodles until al dente. When the noodles are almost done, add leafy greens.
- Mix all the sauce ingredients in a bowl.
- Add cooked noodles to the sauce bowl and mix.
- Top with ground pork and green onion.
- Mix and enjoy!
