米线 | Yunnan Province Rice Noodle Soup | Mi Xian

Ingredients

  • rice noodles (mi xian, but I substituted with Vietnamese rice noodles)
  • chicken broth

Meat

  • ground pork
  • 3 cloves of garlic
  • cooking oil
  • black pepper
  • soy sauce
  • green onion (optional)

Garnish

  • cilantro
  • green onion
  • lemon or lime

Directions

Prep Work

  1. Soak rice noodles in water for ~4 hours.
  2. Wash and chop green onion and cilantro for the garnish.
  3. Mince garlic.

Cooking

  1. Cook the rice noodles according to the instructions until fully cooked. Rinse in cold water after.
  2. In a dry pan, add ground pork and stir fry.
  3. When the pork has fully cooked and the water has evaporated, add oil, garlic, and green onion. Stir fry until fragrant.
  4. Add soy sauce and black pepper to taste.
  5. Add chicken broth and bring to a boil.
  6. Combine everything into a bowl and garnish with cilantro, green onion, and lime juice. Add more soy sauce or salt to taste.
