米线 | Yunnan Province Rice Noodle Soup | Mi Xian
Ingredients
- rice noodles (mi xian, but I substituted with Vietnamese rice noodles)
- chicken broth
Meat
- ground pork
- 3 cloves of garlic
- cooking oil
- black pepper
- soy sauce
- green onion (optional)
Garnish
- cilantro
- green onion
- lemon or lime
Directions
Prep Work
- Soak rice noodles in water for ~4 hours.
- Wash and chop green onion and cilantro for the garnish.
- Mince garlic.
Cooking
- Cook the rice noodles according to the instructions until fully cooked. Rinse in cold water after.
- In a dry pan, add ground pork and stir fry.
- When the pork has fully cooked and the water has evaporated, add oil, garlic, and green onion. Stir fry until fragrant.
- Add soy sauce and black pepper to taste.
- Add chicken broth and bring to a boil.
- Combine everything into a bowl and garnish with cilantro, green onion, and lime juice. Add more soy sauce or salt to taste.
