茶鸡蛋 | Tea Eggs
Ingredients
- 1 dozen eggs
- any kind of red or black tea
- 2 star anise
- 1 tablespoon sugar
- 1 teaspoon kosher salt
- 2 tablespoons soy sauce
- 1/2 tablespoon dark soy sauce (optional - for color)
- water
- ice water
Directions
- Put eggs, star anise, sugar, salt, soy sauce, dark soy sauce in a pot.
- Add enough water to cover the eggs.
- Boil the eggs for 7-10 minutes.
- Take the cooked eggs and submerge in ice water.
- After the eggs cool, make cracks all over the shell with a spoon.
- Put the eggs back into the cooking liquid.
- Add tea to the cooking liquid.
- Simmer for 5 minutes to steep the tea.
- Allow to cool, then refrigerate a couple of hours to overnight.
