茶鸡蛋 | Tea Eggs

Ingredients

  • 1 dozen eggs
  • any kind of red or black tea
  • 2 star anise
  • 1 tablespoon sugar
  • 1 teaspoon kosher salt
  • 2 tablespoons soy sauce
  • 1/2 tablespoon dark soy sauce (optional - for color)
  • water
  • ice water

Directions

  1. Put eggs, star anise, sugar, salt, soy sauce, dark soy sauce in a pot.
  2. Add enough water to cover the eggs.
  3. Boil the eggs for 7-10 minutes.
  4. Take the cooked eggs and submerge in ice water.
  5. After the eggs cool, make cracks all over the shell with a spoon.
  6. Put the eggs back into the cooking liquid.
  7. Add tea to the cooking liquid.
  8. Simmer for 5 minutes to steep the tea.
  9. Allow to cool, then refrigerate a couple of hours to overnight.
